Semolina Soup

  • 5 cups chicken broth
  • 1/2 cup semolina
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • Ground cinnamon

This is a very easy yet surprisingly rewarding soup, which can be prepared in less than half an hour. We have taken this recipe from "Sihhat Matbahi" published in 1918, a Turkish cookbook by Avanzade Mehmed Suleyman.

Boil the chicken broth, add the butter and the salt.

Slowly pour the semolina as you continuosly stir with a spoon.

Reduce heat and simmer for 20 minutes.

Sprinkle with cinnamon and serve.
